Dolores Morenas consists of two different buildings: one for wine-making
and the other for wine aging.
The first one is provided with high technology equipment to make high
quality wines: a stemmer, a pneumatic press, a harvest pump, stainless
steal tanks with cold temperature control devices, earth filters, plate
and frame filters, isothermal stabilisation tanks…
In this building we receive the grapes during the harvest and we select
it by hand.
Between 1970 and 1980 the winery used to produced big volumes of wine
(mainly white) to be sold in bulk. The total capacity of the winery
reached 3 million litres. However, by 1985 the owner decided to start
producing more quality than quantity. Since then, we have been using
only our own grapes, reducing the yield of our vineyards dramatically.
In 2004 we made just 350,000 litres and our aim is a maximum of 500,000
litres to keep our quality level.
At a short distance, within the town centre, you can find our aging
cellar known as "Vistahermosa". This is a classical building of the
beginning of the 20th century where our family started its activity
as winemakers in 1930. 
The building was renewed and adapted to its current use: a peaceful
place where our wines can be aged in around 300 American and French
oak barrels. Its thick walls and high ceiling guarantee the best temperature
and humidity conditions necessary to the wine aging process.
This building has gone through different renovation works. The first
one was in 1987, with the creation of the central barrel room, called
"Vistahermosa". The second one was carried out during the 1990s, when
the room with arches was opened. And the third renovation was finished
in 2002: it is an underground cellar with room for 100 barrels.
This cellar is a kind of wine sanctuary where silence is the king.
